Easy 5 Step Gluten Free Chunky Monkey Cookies

This quick and easy vegan and gluten free chunky monkey cookies recipe will have the whole family going bananas! They are healthy enough for breakfast but they taste indulgent enough for dessert.  The consistency is soft and fluffy, similar to a banana bread texture.  I love these gluten free chunky monkey cookies warm, straight from the oven, but they’re also absolutely delicious chilled from the refrigerator or freezer.

Prep Time: 5 min. Cook Time: 12-14 min Total Time: 17-19 min. Course: Breakfast / Snack / Dessert Servings: 12 cookies

Materials

  • Large Mixing Bowl
  • Large Spoon
  • Baking Sheet
  • Parchment Paper

Ingredients

  • 2 Bananas, mashed (about 1 c.)
  • 1 c. Almond Flour
  • 1/2 c. Creamy Almond Butter
  • 3 tbsp. Pure Maple Syrup
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Soda
  • 1 pinch Cinnamon
  • 3 tbsp. Unsweetened Coconut Flakes
  • 1/2 c. Dark Chocolate Chips
  • 1/2 Banana, sliced for garnish

Directions

Step 1: Preheat oven to 350 degrees. Line baking sheet with parchment paper.

Step 2: Combine all ingredients except dark chocolate chips and sliced banana to a mixing bowl. Stir to combine.

Step 3: Fold in dark chocolate chips.  Scoop dough onto baking sheet and press a thin slice of banana into the top of each ball of dough.

Step 4: Bake for 12-14 minutes or until golden around the edges.

Step 5: Let cool for 20-30 minutes and enjoy your delicious gluten free chunky monkey cookies!
