Make a delicious birthday breakfast or Saturday morning surprise for your babe with this Homemade Rainbow Cinnamon Buns Recipe!
For the Dough
- 1 package of yeast
- 1 cup warm milk (plant-based is okay if making vegan)
- 1/3 cup sugar
- ¼ cup soft butter (vegan works great)
- 1 ½ tsp salt
- 1 large egg/flax egg (if making vegan)
- 3 ½ -4 cups flour
- 2 tsp vanilla
- 1 tsp almond extract
- 3 tbsp sprinkles
For the Filling
- 2 tbsp light brown sugar
- 6 tbsp soft butter
- ½ cup white sugar
- 1 tbsp cinnamon
- 1 tsp vanilla
- ½ tsp almond extract
- Food coloring in rainbow colors (pink, purple, green, blue, yellow)
- Thread or floss for cutting
- Optional (1/4 cup cake mix 1-2 tbsp sprinkles)
For the Icing
- 2 tsp milk (plant-based is okay)
- ½ tsp vanilla
- 1 cup powdered sugar
- +sprinkles for on top
Step 1: In the bowl of your stand mixer, dissolve yeast in milk. Add sugar and let it sit until the yeast has bloomed.
Step 2: Add the butter, salt, egg, vanilla, almond extract, and mix with a spoon.
Step 3: Pour in the flour and using the dough hook, mix for 5-7 minutes. The dough might start sticky, but then should pull away from the sides of the bowl. If it doesn’t by the end of 7 minutes, add more flour, about 2 tbsp at a time.
Step 4: Once the dough is mixed, pour in sprinkles and mix until they are well distributed in the dough, no more than 1 minute.
Step 5: Make the dough into a ball and cover and let rise for about 1 hour, until doubled in size.
Step 6: Make the filling by mixing brown sugar, white sugar, butter, cinnamon, vanilla, and almond extract.
Step 7: Get 5 bowls and divide the filling evenly in the bowls. Add 2 drops of each color of food coloring into each of the bowls and mix well.
Step 8: Once the dough has risen, lightly grease a clean countertop. Roll dough out into a rectangle at least 20 inches by 16 inches.
Step 9: Leaving a 1-inch edge, take the first color of sugar mixture and spread evenly in a line on the dough, then take the next color and spread it right beside. Repeat with the remaining colors.
Step 10: Roll the dough up tightly into a log. Make sure that you roll so you will have the colors in each of the rolls when you cut them.
Step 11: Using thread or floss, cut the dough into 12 even pieces that are about 1 ½ inches thick.
Step 12: Put the rainbow cinnamon buns into a greased or parchment-lined, 13 X 18 pan. Cover and let the buns rise for another hour or so.
Step 13: While the rainbow cinnamon buns are rising, preheat the oven to 375ºf.
Step 14: Bake uncovered for 13-16 minutes. The tops of the buns should be just starting to turn golden brown.
Step 15: Mix icing ingredients until smooth and pour evenly on top of warm rainbow cinnamon buns. Add a few extra sprinkles on top.
