Makes 6 marshmallow cookie pops
- 3 1⁄2 tablespoons unsalted butter, softened
- 1⁄3 cup light brown sugar
- 1 teaspoon imitation vanilla
- Pinch fine sea salt
- 1 large egg yolk
- 2⁄3 cup all-purpose flour
- 1⁄4 teaspoon baking soda
- 1⁄3 cup dehydrated marshmallows
- 1-2 tablespoons sprinkles
Step 1: Preheat oven to 360 F. Line a half sheet pan with parchment paper.
Step 2: In a bowl, use a hand mixer to beat together the butter and brown sugar on medium until light and fluffy, at least 3 minutes.
Step 3: Add the baking soda and vanilla and beat for another two minutes.
Step 4: Add the egg yolk, beat for one minute.
Step 5: Add the flour and beat to just combine. Fold in the marshmallows and sprinkles.
Step 6: Divide dough into six equal portions.
Step 7: Place on cookie sheet and gently press craft stick halfway through cookie dough. Ensure cookies are far enough apart so they don’t touch when they spread.
Step 8: Bake for exactly 10 minutes. Allow to cool completely on the pan before moving.
