I adore the children’s book Apple Cake: A Gratitude by Dawn Casey, and made this Thanksgiving Apple Cake Recipe from her story. I absolutely love reading it with my kids this time of year. The book is a rhyming story in which a child says thank you to the gifts that nature proxies to her and her family.
She is thankful for the eggs from the chickens, nuts from the trees, and milk from cows. Follow along as she gives thanks & collects all the ingredients to make an apple cake with her family. A recipe for Apple Cake at the end of the book allows you and your kids to share in joyful gratitude.
My kids love cutting the apples in half horizontally to see the special star.
They like chopping up the apples, grinding the nuts to make the flour for the Thanksgiving Apple Cake recipe, cracking the eggs & of course eating it!
This year I topped the cake with apple star slices which I made using a star cookie cutter & I even added a star apple to our cider. A little cinnamon & powdered sugar sprinkled on top and you have a beautiful dessert to bring to your neighbor, coworkers, or your own thanksgiving dinner.
Making this Thanksgiving Apple Cake recipe has become a fun family tradition the week of Thanksgiving. We enjoy our apple cake with a scoop of vanilla ice cream & say what we are thankful for in our lives.
